Chocolate Bche de Nol

(Serves 4 People)

The Christmas log is a tradition in France. After the midnight mass, The family eats the roasted turkey with all trimmings and finish by the log.. 

Tools: - Kitchen Aid Mixer -  Kitchen Aid whisk- 2 quart mixing bowl - half sheet pan - wire whisk - 1 rubber spatula - Pan liner or parchment paper

Ingredients for Biscuit :to convert - 8 oz. AP Flour - 8 medium eggs - 20 oz. Granulated Sugar - 1 T. baking powder

Steps for Biscuit: 1)Mix Flour and baking powder together and put thru a sift if necessary. 2)Warm up the Kitchen Aid bowl under hot water 3)Beat eggs and sugar, in that bowl, at high speed for 15 minutes, until very thick 4)Fold in delicately but rapidly the flour mix to the beaten eggs and pour into the pan (that has been line with the parchment paper..)   5)Bake in a 350o preheated oven for 15 minutes 6)Let the biscuit rest for 15 minutes at room temperature and turn upside down on a sheet of plastic wrap slightly larger than the cake  7)Spread 1/2 the butter cream over the cake and roll the cake  as shown on picture, using the plastic wrap to shape to a perfect round 1. (refrigerate for 2 hours) 8)Remove the plastic sheet and cover evenly with the remaining butter cream. Use a large fork to fake the bark. Decorate if you wish with Meringue mushrooms

Ingredients for Butter Cream:to convert - 3 egg yolks - 1/3 cup AP confection sugar - 1/4 cup Nesquick chocolate powder - 6 ounces unsalted butter

 

Steps for Butter Cream: 1) Get all ingredients at room temperature. 2) Beat vigorously for 15 minutes until smooth 3)Reserve at room temperature until filling and icing of cake 4)M5)U6)G

Steps for Butter Filling and Icing: 1) Get all ingredients at room temperature. 2) Beat vigorously for 15 minutes until smooth 3)Reserve at room temperature until filling and icing of cake 4)M5)U6)G
