Note: The size of potatoes must be 90 minimum to get strips 4 inch long after they are peeled. A stainless steel mandoline is best to use but it is not impossible to cut by hands. Russets, Yukon Gold and White bakers work pretty well for this technique as long as they are fresh and firm.



1) Pell the potatoes and slice them length wise on the small blade of the mandinine2)Cut a perfect square removing little as possible. 3)With a parry knife, cut deep a square at 1/4 inch from the sides on everyone of them, careful of not cutting pass the corners.
